Game Day Salsa Burger

IT’S BURGER TIME! Here is a big SHOUT OUT to the Chattanooga Mocs! Yes, readers from outside of Chattanooga. THE MIGHTY UTC MOCS – It’s a cool bird as well as a historic landmark in Chattanooga. Did I mention the Moc mascot is named “SCRAPPY.” He is named after a Chattanooga Sports legend, coach and businessman named Scrappy Moore.

What better way to start off UTC football and tailgate season for Moc’s football than with a recipe geared towards Nebraska Cornhusker Football. I’m kicking things off with a Seasoned Corn Tortilla Burger topped with Corn Salsa and a spicy mayo! So here we go, get ready for some football and enjoy this kickoff tailgate recipe. Go Mocs!

Scrappy’s Cornhusker Salsa Burgers – Start making some basic burgers as you normally would and then do this…

For the Salsa
1 can whole corn drained
1/3 cup chopped purple onion
1/3 cup chopped red bell pepper
1/2 tablespoon cilantro
Cilantro to taste
Chili powder to taste
Parsley flakes
1 tablespoon fresh lime juice
1 tablespoons fine chopped jalapeno
Dash of salt & pepper
Tablespoon of ketchup
Dash of hot sauce
Combine all of the ingredients, cover and chill before using.

For the Mayo
Mayo with a dash, or twelve, of hot sauce
Black pepper
Dash of chili powder
Combine, cover and chill.

Directions: Make your burgers as you normally do but toss in some fine ground corn tortilla chips, about two handfuls to four to six burgers. Season as you normally would. Grill up the burgers; serve on a nice bun with the spicy mayo and cornhusker salsa. Add more of your favorite toppings as desired. The salsa also works great as a topping for brawts, sausages and dawgs. Serve hot and help Scrappy take a bite out of the Cornhuskers!
