Cheesy Boneless Bite Tailgate Sandwich​

Hello BLUE RAIDER FOOTBALL FANS! This is Kent Whitaker, AKA The Deck Chef, and It’s great to be back with the Blue Raider Network pregame and tailgate Crew! Time to face off against the Tennessee Tech Golden Eagles!

Let’s start this season with a request for something simple!

Nathan from Smyrna emailed me asking for an idea on a budget-friendly tailgate hack for using store-bought boneless chicken wings or bites. He and his wife are just starting to tailgate, just bought a small covered tailgate grill, and want something easy. And they both love boneless wings.

Here you go Nathan – A Blue Raider Vs Golden Eagle Cheesy Boneless Bite Tailgate Sandwich!

  • Pre-cooked and breaded chicken bites – already, breaded/battered, fried and ready to go.
  • Foil pan, non-stick spray
  • Barbecue sauce
  • Sliced onion, very lightly chopped
  • Shredded Cheese, cheddar, mozzarella, pepper jack – your choice.
  • Real bacon bits, a good amount
  • BUNS! Hotdog buns, slider buns, hamburger buns, Texas Toast – your choice

Place the chicken in a large foil pan and place on the grill, close the lid and start warming up. Most frozen chicken bites etc are fully cooked so we are really just reheating.

As the chicken heats up drizzle lightly with BBQ sauce and stir in your onions. Stir, drizzle, stir, drizzle, as needed to evenly coat. Then as the chicken is nice and hot, stir in the bacon bits and some cheese! Mix, Cover, and remove from heat.
NOW it’s time for your SAUCE!

 

  • 3 parts Mayonnaise
  • 1 Part Barbecue Sauce
  • Teaspoon of Apple Cider Vinegar
  • 2-3 teaspoons Worcestershire Sauce
  • Dash of Red pepper flakes
  • Dashes of Onion Powder
  • Dashes of Garlic Powder
  • Dashes of Black Pepper

Mix everything in a bowl and chill until needed!

Back to the grill – remove the chicken from heat, still in a bunch of cheese, spoon onto a toasted burger bun of your choice, add the chicken, top with the spicy mayo and your choice of toppings.
You could add staples such as shredded lettuce and pickles or you could use premade shredded coleslaw mix for some crunch, and a spoon full of Chow Chow style relish.

Talk about easy, chicken bites, sauce, onions, bacon and cheese, on a bun drizzled with an easy may BBQ sauce and your choice of toppings. And, this works great with premade chicken tenders, chicken breasts, or even shredded rotisserie chicken from the deli – and your own grilled chicken of course.

The point is – this recipe can be as easy, or as involved, as you want to make it!
