Grilled Sliced Potatoes

Grilled Sliced Potatoes are easy to cook and make a perfect addition to any meal! Plus – the seasoning choices are endless!

  • 2 – 3 large baking potatoes – rinsed, not peeled, sliced
  • Olive oil
  • Melted butter or oil
  • Dashes of your favorite seasoning.

Directions: Slice several baking potatoes into thick chip-like slices. You can also slice lengthwise. Coat lightly with melted butter, oil, or olive oil and your choice of seasoning. In my opinion, creole seasoning seems to work best with this dish. Oil the cooking grate or grill using a grilling basket. Grill until marks appear and edges are golden, turning as needed.

Don’t Stop There! You can also use grilled eggplant, squash or any of your favorite grilled veggies. You can drizzle with a light Tex-Mex style cheese sauce, vinaigrette or even a thinned ranch dressing if desired. NOTE: You can bake this dish in the oven as well in case you don’t have grill space.
