Scrambled Egg Flatbread Tacos

Egg Tacos are a quick and easy recipe solution for a tasty breakfast! And, roll the soft taco shell a bit tighter and you have a burrito.

And, if you’re not in the mood for a taco then simply use flatbread or pita pockets.

Ingredients:

  • Chopped onion
  • Chopped red or green pepper
  • Butter
  • Crumbled bacon bits
  • Chopped red or green onion
  • 4 large eggs
  • Salt and pepper
  • Shredded cheese
  • Chunky Salsa, slightly warmed

Directions:

lightly brown the onion, and pepper in a small amount of butter. Stir in eggs, bacon bits, salt and pepper. Serve hot on soft flour taco shells topped with cheese and salsa that’s been slightly warmed. Add a spoonful of chopped japapeno peppers or a dash of hotsauce for a spicy version.
